Vegetables and Wheat Berries in Caramel Sauce

Adapted from The Secrets of Success Cookbook
Serves 4

Ingredients:
-1/4 cup packed brown sugar
-1/4 cup water
-1/4 cup fish sauce
-3 tablespoons your choice of rice vinegar, white wine vinegar or apple cider vinegar
-1 teaspoon minced garlic
-1 teaspoon tamari or soy sauce
-1 teaspoon minced ginger
-1 teaspoon ground black pepper
-1/2 jalapeno, removed of seeds and ribs and finely minced
-Cooking spray
-1/2 cup chopped onion
-Approximately 5 cups steamed vegetables (I like to use a mixture of carrots, green beans, and broccoli, but it’s up to you)
-2 cups cooked wheat berries
-2 tablespoons cashews

Method:

In a small bowl stir together the brown sugar through jalapeno mixing well. Set mixture aside. Spray a skillet with the cooking spray and place over medium high heat. Add the onions and cook until translucent, about 5 minutes. Add the sauce mixture and bring to a boil. Turn the heat down to medium low and cook until mixture is reduced by half, about 12 minutes. Add in the steamed vegetables, wheat berries, and cashews and toss lightly to coat with the sauce. Serve while hot.
