Pork and Pumpkin Meat Loaf

Yields 4 servings

-1 pound ground pork
-1 cup pumpkin puree
-1/4 cup egg substitute
-1/3 cup quick cooking oats
-1/2 cup minced sweet onion
-2 tablespoons chopped celery leaves, optional
-1 tsp. rubbed sage
-Salt and pepper, to taste
-1 tbsp. worchestershire sauce

Winterberry Topping
-1 cup fresh winterberries, picked over for stems
-1 tbsp. sugar
-1/4 cup water

Method:

Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment, spray with nonstick spray.

Add all meatloaf ingredients to a large mixing bowl. Toss gently to combine, form into a log on the baking sheet.

Place in the oven, bake for 30 minutes. Meanwhile, add winterberries, sugar and water to a small sauce pot. Bring to a simmer, cook uncovered for 15 minutes.

Spoon onto the meatloaf, bake for another 15 minutes. Remove the meatloaf from the oven, rest for 5 minutes.

Slice and serve.
