Pasta with Cheesy Pink Sauce

Serves 2-4

-1 teaspoon olive oil
-1/2 yellow or white onion, chopped
-2 slices bacon, roughly chopped
-2 cloves garlic, minced
-14.5 ounce can diced tomatoes
-1 pinch sugar
-1 pinch red pepper flakes
-1 teaspoon fresh thyme
-2 tablespoons chopped basil
-2 ounces fresh goat cheese, such as Chavrie
-1/4 cup half and half
-1/2 pound dry pasta, cooked just shy of al dente
-1/4 cup parmesan cheese, for garnish

Heat the olive oil in a saucepan over medium heat. Add the onions and bacon and saute, stirring until the onions are translucent. Add garlic and saute for one minute. Then add tomatoes through basil and reduce heat to medium low to simmer for 15 minutes. Add goat cheese, half and half, and pasta and saute for two minutes longer. Serve immediately, topping with parmesan cheese.
