Double Chocolate Banana Muffin Tops

P1011198Yields 8 muffin tops or 8 regular sized muffins

Ingredients:
-Cooking spray
– 2 bananas
– 1 teaspoon pure vanilla extract
– 2/3 cup turbinado surgar or raw sugar
– 1 individual container prune baby food
– 1/4 cup vanilla soy milk
– 1/2 cup canola oil
– 1/3 cup cocoa powder
– 1 1/2 cup brown rice flour
– 1/2 cup white whole wheat flour
– 1/4 cup vegan chocolate chips
– 3 teaspoons arrowroot powder
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon sea salt

 Method:

1. Spray muffin (top) pan with cooking spray, and preheat your oven to 350 degrees F.

2. Break bananas into chunks. In a food processor, process bananas along with sugar, prune baby food, vanilla, soy milk, oil and cocoa powder until smooth.

3. In a large food bowl, combine flours, chocolate chips, arrowroot, baking powder, baking soda, and salt.

4. Combine dry and wet ingredients. Do not overmix.

5. Fill muffin pan and bake for approximately 14-16 minutes.

6. Cool on a baking rack for 10 minutes before serving.
