BBQ Short Rib Quesadillas
-1/2 cup shredded short rib meat
-2 tablespoons BBQ sauce
-1/2 cup shredded low fat Swiss cheese
-1/2 small green apple, thinly sliced
-2 whole wheat tortillas
-Sour cream and corn salsa, for topping
In a small saucepan combine short rib meat and BBQ sauce and heat over medium heat until warm.
Place a tortilla on a cutting board or plate and top with 1/2 the short rib meat, 1/2 the shredded cheese, and 1/2 the apple slices. Fold in half and place in a nonstick skillet over medium heat or grill pan. Cook 3 minutes pressing down until the cheese melts. Carefully turn over and cook until golden on the other side (approximately 1 minute).
Repeat with the remaining tortilla and filling ingredients and top both with sour cream and corn salsa.
