Sweet and Crunchy French Toast

Tonight’s indulgent dinner was another tester recipe for Tami’s upcoming cookbook.  It’s been fun being one of her testers for a number of reasons.  For one, it causes me to be adventurous and try recipes I might not otherwise make.  I realize french toast doesn’t seem adventurous, but it is usually one of those meals I deem too indulgent to make.  However, it’s easy to convince myself to make it when it means helping out a fellow blogger.  It’s also been fun to see all the behind the scenes work that goes into making a cookbook.This recipe didn’t disappoint and like the others I had a hard time telling it was vegan.  It involved dipping french bread slices into a lovely batter and then dipping them in a nice crunchy coating.  The result was, as the title suggests, crunchy and sweet.  It reminded me of the perfect diner brunch.

Since I cannot share Tami’s top secret recipe with you I wanted to recommend one I have made over and over again with great results: Cooking Light’s French Toast Souffle.  It is one of those fool proof recipes that comes out perfect every time and is easy to adapt.  It is baked rather than cooked on the stovetop, making it a fun twist on regular french toast.  I like to make it a little more indulgent by adding a pecan streusel topping, but you could also make it healthier by including fruit between the layers.  It’s a favorite brunch dish of mine and I am sure it will quickly become yours too.

That looks wonderful! I rarely make french toast. It’s also hard to make it taste good (at least to me). That french toast sounds like it would have a good crunch and not be overly eggy.

French toast is my favorite brunch item. Both of yours look awesome! I’ll definitely try the cooking light recipe soon.

Kelly, this sounds scrumptious. I love French Toast. I’ve always wanted to try a French Toast Casserole. The topping sounds very tasy. :)

Alison – It is definitely not overly eggy. It tastes more light and fluffy.

You reminded me that I haven’t had french toast in so long. Too long. I love a crunchy french toast, that looks so good! And so does the souffle, I like that it’s versatile.

mmm, french toast! maybe that will be a good way to mix is up from the strata that was last week’s lunch :)
