Sandwiches with Caramelized Onion Ricotta Spread

As I mentioned in my early morning post, my ricotta cheese making experiment produced a far lower yield than I was expecting so I decided to turn it into a flavored spread in order to stretch it further.  It was kind of a bummer because the taste of the cheese was rich and clean and I would have preferred to eat it straight up.  After surveying the refrigerator and pantry I spotted a Harry & David Caramelized Onion Spread and worcestershire sauce.  The following simple spread resulted:

Caramelized Onion Ricotta Spread
Ingredients:
-1/3 cup ricotta cheese
-2 tablespoons prepared caramelized onions or caramelized onion spread
-Splash worcestershire sauce
-1/4 cup shredded mozzarella cheese
-1/2 teaspoon olive oil
-Salt & freshly ground black pepper to taste
Method:
Combine all ingredients in a food processor and blend until smooth and well incorporated.  If you prefer a thinner spread you could opt to add more oil or some broth.
In addition to the spread we used the following sandwich fillings:

  • Thinly sliced prosciutto
  • Tomatoes
  • Roasted asparagus
  • Spinach leaves

The latter two came from the salad bar at Whole Foods in order to save time.  All ingredients were nestled between sliced homemade focaccia, which made for a pretty filling lunch when paired with a Smoked Mozzarella Pasta Salad from the Whole Foods deli.  The recipe for the focaccia came from Martha Stewart’s Baking Handbook, my goto baking resource.  However, you can also find the recipe here.  My variation was slightly different, however, in that I scaled back the olive oil and used a combination of all purpose flour and whole wheat flour in place of the bread flour since I was out.  Hope everyone had a fantastic holiday weekend.  I’m off to do more cleaning and a little reading, but first I will leave you with my cute Ollie photo of the day.  This time with one of his favorite toys, a string of squeaky sausages.
